Pancakes for vegans

Here is a colorful, fun and healthy dish that is perfect for breakfast or as a dessert after a meal. Our recipe is also from the ANKARSUM recipe book.

Ingredients - for 10 pancakes

500 ml oat milk or other vegetable milk

200 grams of flour

50 grams of sugar

¼ teaspoon salt

oil or butter for frying

For decoration and filling:

vegan whipped cream

fFresh berries such as strawberries, raspberries and blueberries

Pancakes for vegans, step by step:

• Assemble the ANKARSRUM with the whisk and the plastic mixing bowl.

• Pour the oat milk into the bowl.

• Start the machine at low speed while adding the dry ingredients: flour, sugar and salt.

• Continue the whipping until you have a smooth, liquid dough.

• Heat the oil or butter in a pancake pan and use a ladle to scoop out a thin layer of batter into the pan..

• Fry both sides until golden brown.

• When the first pancake is ready, put another portion of oil in the pancake pan and fry all the pancakes. After that, keep them warm. You can do this by piling them on a plate and covering the pile with a clean tea towel.

Serve with vegan whipped cream, vegan vanilla ice cream and lots of colorful berries!
