Apple cupcake with salted caramel topping

It is no coincidence that apples are the star of late summer and autumn days. Look beyond the apple pie variations, instead create something completely unique and special with a simple muffin, embellished with a special mousse crown. Our recipe for this week is an extra delicious cupcake that enchants you with delicious apples, salted caramel sauce and mascarpone cream.

Ingredients:
2 egg
180 grams of sugar
100 grams of oil
200 grams of milk
240 grams of wheat flour
1 tablespoon of cinnamon
1 tablespoon of vanilla sugar
1 pinch of salt
2 tsp baking powder
About 3 apples - Cut them into small pieces
Apple cupcake with salted caramel topping - step by step
• Preheat the oven to 185°C.
• Assemble your ANKARSUM stand mixer with the 3.5 liters plastic bowl and the double whisk attachment, which are part of the starter set.
• Mix the eggs and sugar until foamy.
• Add the oil and mix, then add the milk.
• Sift all the dry ingredients, pour them gradually into the mixing dough and mix until smooth with your stand mixer.
• Now take the bowl out of the stand mixer, add the chopped apple pieces to the dough, then mix it with a spoon.
• Get a muffin mold and fill them. If possible, choose a large American-sized cupcake form, which can hold 15-16 muffins.
• Bake for approx. for 20 minutes.
• Since the strength of each oven is different, check with a needle test whether it is properly baked.
• Now make the salted caramel sauce.
Ingredients for salted caramel sauce:
180 grams of sugar
50 grams of butter
150 grams of cream
1 tsp salt
Salted caramel, step by step:
• Pour the measured sugar into a pan.
• It is important to use a cast-iron pan or a pot with a thick bottom to prevent the sugar from burning!
• While stirring constantly, melt the sugar, which will soon turn golden brown. Be careful, because it's very hot.
• When the sugar has melted, remove the pan from the heat and add the butter.
• Mix until smooth, then add the cream and salt.
• Now put the caramel sauce back on the stove and let it boil for a minute. The main thing is that the sauce is sufficiently thick (remember that it thickens when it cools down).
• Cool before use.
Ingredients of Marcaropone cream:
200 grams of mascarpone or cream cheese
300 ml of cream
90 g powdered sugar
0.5 tsp vanilla powder
Marcaropone cream step by step:
• Put all the ingredients in the plastic bowl of your ANKARSRUM stand mixer, then mix at medium speed until you have a thick, soft mass. It only takes a few minutes to make it good.
• Put it in a pastry bag and pour it on top of the finished cookies.
• At the end, drizzle the salted caramel sauce on top.
