Strawberry mini cakes with recipe video

This time, our recipe is from the ANKARSRUM recipe book.
Ingredients for 12 mini cakes:
6 eggs
270 grams of sugar
90 grams of flour
120 grams of potato starch
3 tsp baking powder
3 tsp vanilla sugar
Filling and decoration:
2 banana
strawberry jam to taste
500-600 ml of whipped cream
Fresh strawberries (800-1000 g)
Making strawberry mini cakes step by step:
• Preheat the oven to 175 °C.
• Assemble your ANKARSRUM stand mixer with the whisk.
• Beat the eggs and sugar on medium speed for about 10 minutes.
• In a separate bowl, mix the dry ingredients: flour, potato starch, baking powder and vanilla sugar.
• Pour the dry ingredients into the mixing bowl and mix on the lowest speed.
• Pour the dough into a 32*37 cm, approx. 3 cm high, lined with baking paper baking tray.
• Bake in the lower part of the oven for approx. for 20 minutes.
• When the cake plate has cooled, cut out 12 smaller, round cake plates from it with a cookie cutter with a diameter of 7 cm.

• Mash the banana and cover the first layer with this banana puree.
• Mix the strawberry jam with a little whipped cream and spread it on the second layer.
• Cover the cakes with whipped cream and decorate with fresh strawberries.

If the strawberry season is over, the cakes can also be made with other berry seasonal fruits.
