ANKARSRUM chocolate ice cream miracle

Chocolate ice cream is an eternal classic. One of the secrets of its taste is to make it from excellent ingredients, while our hearts are filled with love. The ice-cream maker of your ANKARSRUM stand mixer will be your partner in this, as you will not get tired, but the result will be a miracle. This video will help you assemble!

Ingredients:
90 grams of sugar
3 egg yolks
300 ml of milk
100 ml cream
0.5 grams of salt
100 grams of dark chocolate (70%)
For decoration: grated dark chocolate.
ANKARSRUM chocolate ice cream miracle step by step:
The day before, place the bowl in the freezer for 20-24 hours.
Assemble your Ankarsrum stand mixer with the double beater set, which is part of the starter box, but can also be purchased separately..
Mix the egg yolks and sugar until foamy.
Boil the milk and cream with the salt. Chop or break the chocolate into larger pieces and add to the mixture. Stir until the chocolate melts. Now add the egg yolks and the sugar that you whipped earlier and mix it all together. Simmer over low heat at about 84°C, being careful not to boil.
Now put this mixture in the fridge and let it cool down to fridge temperature.
Assemble your Ankarsrum stand mixer with the ice-cream maker. Pour this mass into the ice-cream maker through the opening in the lid.
Mix the mass at medium speed in the stand mixer for 20-30 minutes until it reaches the desired consistency.
Freeze the finished mass immediately until serving.
