Durum dough with Ankarsrum stand mixer

We present a family gastro program for the cooler, rainier, autumn days. Make durum dough at home, which is tasty, easy to prepare and offers a fun, joint activity, since you can make it together! Our recipe is also from the ANKARSRUM recipe book.

Ingredients:

500 grams of durum wheat flour

7 eggs

3.5 tablespoons of oil

Making homemade durum dough with an Ankarsrum stand mixer, step by step:

• Assemble your Ankarsrum stand mixer  with the 7-liter stainless steel mixing bowl included in the basic set, the spiral kneading hook and the kneading roller, as well as the scraper for the mixing bowl, which prevents the dough from sticking to the walls of the bowl.

• Pour the flour into the bowl and start the machine at low speed.

• Add the eggs one at a time.

• Add the oil and pull the lever towards the center of the bowl as needed to help the ingredients knead evenly. Hold the handle 1 inch from the edge of the bowl until the dough is done. Set the timer for 8 minutes and let the robot machine work.

• Now place the dough on a floured surface and knead it.

• Cover and let rest in the refrigerator for at least 30 minutes.
