Homemade ketchup with Ankarsrum stand mixer

In today's recipe, we make homemade ketchup. Try this easy, healthy recipe made without flavor enhancers and coloring agents, and the store version will no longer be an option.
Ingredients for about 1.5 liters
1 onion
1 stalk of celery
2 cloves of garlic
2 tablespoon olive oil
800 g tomato
400 g tomato sauce, pureed or blended
200 ml water
1 tablespoon Worcestershire sauce
1 tablespoon of ground ginger
1 tablespoon dried basil
1 tablespoon of dried thyme
½ tablespoon ground coriander
½ tablespoon of dried fennel
½ tablespoon of salt
1 teaspoon dried chilies
150 ml red wine vinegar
80-160 g brown sugar to taste, or an equivalent sweetener
Homemade ketchup step by step:
1. Cut the onion, celery and garlic into small pieces, put them in a pan and simmer until soft.
2. Add the Worcestershire sauce, ginger, basil, thyme, coriander, chilli, salt and fennel.
3. Chop the tomatoes and add them together with the sauce. Then add water. Let it cook for 20 minutes and stir occasionally.
4. Assemble your Ankarsrum stand mixer with the blender.
5. Add the sauce and mix well.
6. Drain the sauce, then pour it into a clean pan, add sugar and vinegar. Boil for approx. for 10 minutes.
7. Taste and, if necessary, season with salt, sugar and spices.
8. Pour into a glass, let it cool, then put it in the fridge to set.
ANKA TIP: It makes a great gastronomic gift. Use a sugar substitute instead of sugar, so ketchup can be made diabetic.
