Kiwi pina colada mocktail
2023. 01. 22.
The name mocktail was first used in 1916 for refreshing, icy long drinks. In our recipe video, we show how easy it is to put together such a vitamin-rich drink with an ANKARSUM food processor!
Our recipe is from the ANKARSRUM recipe book.
Ingredients for 2 large or 4 small glasses:
200 grams of frozen pineapple
100 grams of fresh pineapple
250 ml of creamy coconut milk
to taste (approx. 1 tablespoon) maple/agave syrup
Juice of 3 limes
2 peeled kiwis
100 ml sparkling water or flavored soda
1-2 tablespoons of maple/agave syrup, to taste
To decorate:

Preparations for the previous day:
• Watch our video by clicking here!
• Freeze 200 grams of diced fresh pineapple.
• Assemble your Ankarsrum food processor with the citrus press and squeeze 3 limes.
• Now assemble your Ankarsrum food processor with the blender.
• Mix the frozen pineapple chunks, fresh pineapple and creamy coconut milk until smooth. Taste and add syrup to make it sweeter, then pour the mocktail into glasses.
• Rinse out the blender if you want to make a pure green mocktail, but otherwise you can blend the kiwi mocktail right after the piña colada.
• Blend the peeled kiwi, lime juice, carbonated water or soda and syrup until smooth. Taste and add more sweetener if needed.
• Pour the green kiwi mocktail into the piña colada glasses and swirl with a spoon or straw. Add a slice of lime and pineapple and ice cubes as garnish.
Tip ANKARSRUM:
You can also make two separate mocktails. Add the juice of 1 lime to the piña colada mocktail while blending and it's ready! For the kiwi mocktail, add more sparkling water or clear soda, a few tablespoons of sweetener, ice cubes and mint for decoration. The beautiful green color of the kiwi may change from bright green to pale green when blended. In this case, you can brighten up the color of the mocktail with about ¼ teaspoon of spirulina powder while blending. The taste of the powder will not be felt, because the sweetness of the fruits will suppress it.
