The strainer is proof of how many possibilities are hidden in each kitchen appliance, which we often don't even notice. However, such a device can be used not only in professional restaurants, but even at home

What is squeezing?

Squeezing is a kitchen process during which food with coarser fibers is made more pulpy and the valuable parts of the raw material are separated from the worthless, unusable parts. For example, seeds from fruit flesh, smaller, stringy bones from fish. Many people turn to the blender in cases where the strainer could be used to achieve an ideal result: food with a puree consistency, cleaned of all unnecessary substances.

 

With the blender, you can mix the harder parts of the raw material, but of course that way they get into the food. When squeezing, we break the soft part of the food through the sieve. So, when squeezing, we separate the indigestible, hard parts and other, valuable dry matter. 

What do we use the strainer for?

Whether you are drawn to traditional home-cooked meals, international flavors or modern cuisine, you will find examples of dishes for which knowledge of this process will come in handy. 

Squeezing when cooking fish soup

The Danube, Tisza, and Balaton fish soup are different, and this topic is the subject of serious debate. It is not customary to squeez fish soup from the Danube, while some say that it is precisely this operation that gives fish soup from the Tisza its flavor and soul. In fact, it is worth noting about the fish soup that restaurants especially like to prepare it by squeezing it, because that way they will certainly serve the right quality, and there will be no small bone fragments in the soup.

How do we squeez the fish? In fact, strainer devices can be manual or electric.

Jams and sauces

You can make divine home-made jam from small-seeded fruits. You can use many creative recipes to spice up fruits that are divine in themselves, those who are really committed have already tried raspberries with mint, strawberries with rhubarb, or elderberry apple jam. Of course, it is a pity for very routine jam makers to describe that the small-seeded raw material must be squeezed. The situation is similar to jams in the case of chutneys, since, for example, we use pureed fruit as a raw material when making currant, quince or dogberry chutneys.

However, it is also worth thinking about the quantity. The performance of a manual strainer is 30-36 kg/hour, so that you get tired in the process. Therefore, if you squeezing regularly, it is most likely worth buying an
electric strainer
that can perform up to 400 kg/hour, so that you don't even have to get physically tired

 

These are just the most common examples, if we let our imaginations run wild, we can find a lot of dishes that are exciting to prepare at home, but the burden of squeezing is what holds us back from experimenting.
