Vegan lemon cupcake with surprise and recipe video

Ingredients for the dough:

200 grams of fine flour
150 grams of granulated sugar
40 grams of ground almonds
5 grams of grated lemon peel
10 grams of baking powder, a pinch of salt
300 ml vegetable milk

100 ml of oil or melted vegetable butter

250 ml vegan whipped cream
100 grams of powdered sugar
30 grams of lemon juice

Vegan lemon cupcake with surprise step by step:

• Preheat the oven to 190 degrees.
• Place 9 cupcake silicone or paper capsules in the muffin tin.
• Assemble the Ankarsrum stand mixer with the whisk and cream mixer set, which is part of the starter box, but can also be purchased separately.
• Sift the flour into the 3.5 liters plastic bowl and start the machine at low speed.
• Add sugar, almond flour, baking powder, grated lemon zest and salt, then continue mixing on low speed.
• Pour the vegetable milk, lemon juice and oil into the bowl and mix until everything is smooth and uniform.
• Pour the batter into the cupcake molds in the Ankarsrum plastic bowl, and then rinse the bowl and the whisks.
• Bake the cookies in the oven for 25-30 minutes, or until the needle test.
• While the cake is in the oven, mix the glaze ingredients in the plastic bowl with the, Ankarsrum whisk.
• Pour the cream into the bowl and start the stand mixer at medium speed.
• Add the powdered sugar and lemon juice and mix with the ANKA, until smooth, then increase the speed and mix until frothy.
• Let the finished muffins cool for 15 minutes in the muffin tin, then put them in the refrigerator to cool completely.
• Use a sharp knife to cut a small piece of cookie from the center of the cupcake and fill the hole with colored candies, then place the cupcake piece back on top.
• Using a Cotton pastry bag press the frosting into the top of each cupcake.
